Georgian Chicken and Vegetable Lolava (Khachapuri Style)

Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 medium onion, chopped
2 cloves garlic, minced
1 bell pepper (any color), chopped
1 zucchini, chopped
1 cup chopped spinach or kale
1/2 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
2 tablespoons olive oil
1 tablespoon tomato paste
1 teaspoon ground coriander
1/2 teaspoon paprika
1/4 teaspoon turmeric
Salt and pepper to taste
1/2 cup chicken broth or water
Instructions
Preheat oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned on all sides.
Add onion and garlic to the skillet and cook until softened, about 3-5 minutes.
Stir in bell pepper, zucchini, tomato paste, spices and salt and pepper. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
Add spinach or kale and cook until wilted, about 2 minutes.
Pour in chicken broth. Bring to a gentle simmer and cook for 5-7 minutes, or until the sauce slightly thickens.
Stir in cilantro, parsley and taste the sauce correcting seasoning if necessary.
Serve the chicken and vegetable mixture hot.
Tips
For extra flavor, marinate the chicken in a mixture of olive oil, lemon juice, and herbs for 30 minutes before cooking.
Feel free to add other vegetables like mushrooms or eggplant.
If you don't have fresh herbs, use dried herbs in smaller quantities.
